- Convenient you can do on the island, but unless you want to spend a lot more it wont be too comfortable. I think you might get a tiny old room. Even in Luen Wo Hui, some market area in Fanling near Shenzhen, just under $2,000HKD will only get you a tiny room (small bedroom) with a tiny toilet and shower from the wall.
In Shenzhen for around ¥2000 you can get a nice, one bedroom, studio apartment with kitchen, lounge area, and a small balcony with a washing machine and a place to hang cloths to try on the balcony. I can't give you any exact prices on the island but it'll be expensive. Try www.geoexpat.com it is a much longer established English speaking forum in Hong Kong, should be able to get some more exact info. Being in Sheung Wan you should get quite good pay to afford the rent in this area however.

- I didn't see many Cantonese learning videos, well, if you can read Chinese then just watch Cantonese TV and read, but harder for me *cry*.
I don't know much about Hong Kong Island, I'm really not there often. I would usually meet my Hong Kong Island friends in Kowloon, kind of a middle place for us. $3,000HKD wont get you anything very nice I don't think, even sharing. But that's the price for convenience right? *wink*.
Anything else you're looking for in Hong Kong? Social groups? Church? KTV?

Do you need to be in any part of Hong Kong? Are you looking for a certain budget? I like to be not too far from Shenzhen, other like to be close to Central Hong Kong. Others like space and want a village house, so there are options :D
